Job Title:                             Chef de Partie, Michelin Star standard

Responsible To:                  Senior Sous Chef / Head Chef

Responsible For:                 Demi Chef


Job Summary:

As a member of the kitchen team, to assist in the running of the kitchen department or section on a day-to-day basis which will necessitate the delivery of consistent food products in-line with agreed recipes and standards of all menu items.

Main Responsibilities:

To undertake food preparation and cooking of items on a day to day basis in a kitchen section directed by the Head Chef / Sous Chef.

Main Duties:

  • Ensure consistency of food quality and presentation of dishes in the section.
  • Follow Instruction by senior chef in the understanding of the job list and the different sections.
  • Follow the rules set and/or by law regarding hygiene, stock rotation, dating, storage, temperature control of refrigerators, pest control, reporting of faulty equipment, reporting of notifiable diseases, reporting of absenteeism be it due to sickness or otherwise.
  • Keep and work to recipes in a good order and up to date if and when necessary.
  • Help to prevent waste of food of any kind and over-production to mis-en-place. Keep food order from store or supplies to a minimum.  Help to minimise the consumption of gas, electricity and water.
  • Ensure good staff communications and relations.
  • Ensure good kitchen security and safe storage of food products.
  • To comply with statutory requirements regarding the work place such as employment law, health and safety, hygiene, fire prevention etc.
  • To be responsible, whilst liasing with the Head Chef/ Senior Sous Chef, for your own development and attendance of training courses organised by the company.
  • To carry out any other reasonable duty to assist in the smooth running of the kitchen.
